Mooseloaf for supper

Post by PHPaul »

Maw is on a liquid/bland food only diet for a suspected peptic ulcer. Waiting on an appointment for an endoscopy to confirm.

Seeing as she can't eat actual food, doesn't seem fair to make her cook my supper so I've been appointed Chief Cook and Bottle Washer for a while. Having grown up with 5 brothers we all did our turn as kids and know basic cooking skills anyway.

Tonight's Experimental Repast is making a meatloaf using ground moose vs. hamburger. Rest of the recipe is typical for meatloaf. Based on recent experience using moose burger as a substitute (neither of us can tolerate beef any more unless it's so lean you might as well eat sawdust...) I have great expectations.

Both the mooseloaf and the sammich were very good if I do say so myself. There'll be more of that in the future for sure.

Tonight was boiled chicken and smashed potatoes with some green beans. Maw is supposed to start working a little more solid food into the diet so we figured a little chicken breast and some taters would fit the bill.

When Tammy was recovering from colon surgery, and just getting back to eating, she asked for a regular ole bake tater on evening. I buttered several good, wrapped in foil and plopped em in the oven on a baking sheet. To this day she occassionally mentions how good that tater was. I get the credit for it, but how can you mess up a baked tater. :D
